About the Author
One of the industry's most well-respected and experienced craft brewers, Cantwell co-founded Elysian Brewing Company in 1996, where he served as head brewer until its sale to Anheuser-Busch in 2015. During his tenure, Elysian was named Large Brewpub of the Year three times at the Great American Beer Festival® (1999, 2003 and 2004), and in 2004, he received the BA's Russell Schehrer Award for Innovation in Brewing. Additionally, he has written for various beer magazines, including The New Brewer, Beer Advocate and American Brewer. Crossing the Boundary – A Terpenic Trip Between Spirits and IPA – Saying Hi to Gin-IPAs.Brewing Eclectic IPA - Pushing the Boundaries of India Pale Ale by Dick Cantwell.I had the pleasure of listening to Dick Cantwell read portions of this book at the recent Craft Brewers conference and eagerly looked forward to getting a copy. It was read easily in an evening and will bear dipping back into time and time again. The book has not disappointed and will provide a wealth of information and recipes for established commercial and homebrewers to chomp on for years to come. It will also appeal to distillers in a big way.Cantwell, waxes historical, philosophical and poetic, with respect to this massively accepted beer style (India Pale Ale – IPA), and citing the symphony and harmony between the use of various botanicals which can play well with the quintessential hops used in the bittering and flavoring of IPAs. What he seeks here is the harmonization of the vast class of plant compounds known as the terpenes (and diterpenes, oxidized terpenes and sesquiterpenes) which are present both in hops and other plant species – often well known to distillers as gin botanicals and others seeking relaxation and pleasure in certain plant-derived compounds. Cantwell conducts the symphony well in this respect.Hops have indeed been used in classical gin formulations of old, along with some bittering herbs and plants presenting similar floral and citrus characteristics often sought out by brewers of the ubiquitous style known as India Pale Ale. So, Cantwell dips into the origin of classical and the burgeoning number of new hop varieties and how they add to the tapestry he unweaves in the story. Cantwell then provides extensive tables and details of botanicals - fruits, stems, leaves, shoots, rhizomes, flowers and seeds and even vegetables, tea, coffee and oak and other woods for potential use in IPA recipes. Brief coverage of some of the terpenes, esters and lactones and other biochemicals and their flavor characteristics arising from the essential oils of these botanicals and other ingredients is also presented. As such the book will be of interest to both brewers and gin distillers. In-fact, the tables alone will be worth the price of the book, though the story Cantwell weaves is a neat read in and of itself.A couple of minor issues to note is the lack of peer-reviewed references – original publications. The books in this more popular press type series tend to rely on the works of similar authors. I’d like to see a bit more scientific clout behind such works which would add more value to such treatises. It would also help direct the reader and the author to resolve/understand/prevent the few minor mistakes noted such as describing diacetyl as an ester (p.28) and some discrepancies in discussing sulfur chemistry (p. 160). Also, we British do not describe ethyl acetate as pear drops – that is isoamyl acetate – which those in the US call out as circus peanuts (p.159). Minor but nit-picky errors which will not be noted by many but that detract a little from the scientific authenticity of such works. Furthermore, a few references to the growing gin literature and books would help corroborate the nature of flavors that can be imparted to all manner of alcoholic beverages and provide more food for thought in recipe formulation.Despite the minor reservations noted above this book will become classic and highly sought-after tome, and, at a terrific price-value, I congratulate Dick Cantwell on providing an authoritative brewing text, a major talking point for brewing circles and a challenge for brewers to take beer flavor to the next level while maintaining the roots of the IPA style intact.
Getting past the basics of brewing the American IPA, Dick Cantwell takes you into the realm of what's new and edgy in this style, introducing tea, herbs, spices and fruits into the recipe, all while getting the most out of your hop schedules. An easy and informative read with lots of example recipes that can be used as benchmarks and inspiration for your own brews. This was well worth the read!
This is a good book to read for some different ideas. Basic Home Brewing has done a couple of the receipts with good results. I want to try some of these myself.
